Ladyfinger/Okra Stirfry

Ingredients:
Lady’s finger (Okra)- 400-500g
Tomatoes- 2, chopped
Onions- 2, chopped
Garlic- 2-3 pods, chopped
Oil
Turmeric powder-1 tsp
Coriander powder- 2 tsp
Chilli powder-2 tsp (adjust to taste)
Salt to taste
#### Instructions:
1. Prepare Okra:
- Rinse the lady’s finger thoroughly and pat dry with a kitchen towel.
- Trim the ends and chop the lady’s finger into medium-sized pieces.
2. Frying Okra:
- Heat a tablespoon of oil in a pan over medium heat.
- Add the chopped lady’s finger pieces.
- Sprinkle some salt and fry them until they are cooked and slightly crispy.
- Remove the fried okra from the pan and set aside.
3. Making the Stir Fry:
- In another pan, heat some oil.
- Add a teaspoon of cumin seeds and let them splutter.
- Add the chopped onions and garlic. Sauté until the onions turn translucent.
4. Adding Tomatoes and Spices:
- Add the chopped tomatoes to the pan.
- Stir and cook until the tomatoes are soft and mushy.
- Add turmeric powder, coriander powder, chilli powder, and salt according to taste.
- Mix well and cook for 2-3 minutes until the raw smell of the spices goes away.
5. Combining Okra:
- Add the fried lady’s finger to the pan with the onion-tomato mixture.
- Gently mix everything together, ensuring the okra is well coated with the spices.
6. Cooking:
- Cover the pan with a lid and let it simmer on low flame for 8-10 minutes.
- Stir occasionally to prevent sticking, but be gentle to not break the lady’s finger pieces.
7. Final Touch:
- Once the okra is tender and the flavors have melded, check for seasoning and adjust if needed.
- Turn off the heat and let it sit for a couple of minutes.
8. Serving:
- Transfer the okra/ladyfinger stir fry to a serving dish.
- Garnish with fresh coriander leaves if desired.
- Serve hot with steamed rice or Indian bread like chapati or naan.
